So the entire point of Chinese Medicine more or less is that there is -never- “a” pathology/pattern for “a” western condition/issue (for more read “What Does Acupuncture Treat?”).
The pattern you would treat in someone with celiac disease would be the pattern that that particular -person- has. In most cases this would involve the spleen system - but there are many other possible patterns and system involvements.
The most basic possible pattern would be spleen qi deficiency, but that is by far not the only pattern possible.
